Ingredients
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon finely chopped chipotle chiles in adobo sauce
- 1 teaspoon ground cumin
- 1/4 cup chopped fresh cilantro
- 2 (15oz) cans Mrs. GrimesĀ® Black Beans (drained, rinsed)
- 1 (15.25oz) can whole kernel corn (drained)
- 2 medium onions, chopped (about 1 1/2 cups)
- 2 medium Roma tomatoes, chopped (about 1 cup)
- 1 cup chopped red and green bell pepper (about 1/2 of each pepper)

Directions
In large bowl, beat lime juice, olive oil and vinegar with wire whisk until blended. Whisk in chipotle chilies, cumin and cilantro. Stir in all remaining ingredients; mix until well-coated. Season to taste with salt and pepper.
Serving Suggestions: Serve this colorful salsa with chips, or use it to top nachos or tacos.
If you like avocado, top the salsa with chopped fresh avocado just before serving.
