White Bean and Ham Soup
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped (about 1 cup)
- 3 garlic cloves, finely chopped
- 2 (15.5oz) cans Mrs. Grimes® Cannellini Beans (White Kidney Beans) (drained, rinsed)
- OR 2 (15.5oz) cans Mrs. Grimes® Great Northern Beans (drained, rinsed)
- 1/2 pound cooked ham, chopped (about 2 cups)
- 1 (14.5oz) can diced tomatoes
- 2 teaspoons dried thyme leaves
- 1 (32oz) carton 33% less sodium, fat-free chicken broth
- Salt and pepper to taste

Directions
Heat oil in Dutch oven over medium-high heat. Add onion and garlic. Cook 5 minutes or until tender, stirring occasionally. Add all remaining ingredients except salt and pepper. Bring to a boil. Reduce heat; simmer 5 minutes. Season with salt and pepper.
