Ingredients

1 cup thinly sliced carrots
1/2 cup chopped onion
2 large garlic cloves, finely chopped
1 tablespoon vegetable oil
3 cups low sodium vegetable broth
2 (15oz) cans Mrs. GrimesĀ® No Salt Added Chili Beans (do not drain)
1 (15oz) can no salt added whole kernel corn (drained)
2 tablespoons chopped fresh oregano
Salt and pepper to taste

Preparation:

Cook carrots, onion and garlic in oil in Dutch oven over medium heat 5 minutes. Add all remaining ingredients. Simmer 20 minutes or until carrots are tender.
