Vegetable Bean Soup
Ingredients
- 1 cup thinly sliced carrots
- 1/2 cup chopped onion
- 2 large garlic cloves, finely chopped
- 1 tablespoon vegetable oil
- 3 cups low sodium vegetable broth
- 2 (15oz) cans Mrs. GrimesĀ® Chili Beans, No Salt Added (do not drain)
- 1 (15.25oz) can no salt added whole kernel corn (drained)
- 2 tablespoons chopped fresh oregano
- Salt and pepper to taste

Ingredients

Directions
Cook carrots, onion and garlic in oil in Dutch oven over medium heat 5 minutes. Add all remaining ingredients. Simmer 20 minutes or until carrots are tender.
