1 medium onion, chopped (about 3/4 cup)
1 pound bulk chorizo sausage
2 medium sweet potatoes cut in 1/2-inch cubes (about 2 cups)
2 (15oz cans) Mrs. Grimes® Chili Beans (do not drain)
1 (14.5oz can) fire roasted tomatoes with garlic
1 ½ cups vegetable broth
In a Dutch oven or deep 12-inch skillet cook onion and sausage over medium-high heat 8-10 minutes until sausage is no longer pink. Drain excess fat. Add remaining ingredients. Bring to a boil. Reduce heat to medium-low and simmer 20-25 minutes, until potatoes are tender.
