Sweet Potato and Chorizo Chili
Ingredients
- 1 medium onion, chopped (about 3/4 cup)
- 1 pound bulk chorizo sausage
- 2 medium sweet potatoes, cut in 1/2-inch cubes (about 2 cups)
- 2 (15oz) cans Mrs. GrimesĀ® Chili Beans (do not drain)
- 1 (14.5oz) can fire roasted tomatoes with garlic
- 1 & 1/2 cups vegetable broth

Directions
In a Dutch oven or deep 12-inch skillet, cook onion and sausage over medium-high heat 8-10 minutes until sausage is no longer pink. Drain excess fat. Add remaining ingredients. Bring to a boil. Reduce heat to medium-low and simmer 20-25 minutes, until potatoes are tender.
Serving Suggestion: This chili is delicious topped with queso fresco cheese and green onions.
