Ingredients

  • 2 tablespoons butter, divided
  • 1 (16oz) package shelf-stable gnocchi
  • 1 medium shallot, finely diced
  • 1 garlic clove, grated
  • 1 (5oz) package baby kale, spinach and/or Swiss chard (6 cups packed)
  • 1/2 cup water
  • 1 (15oz) can petite diced tomatoes (do not drain)
  • 1 (15.5oz) can Mrs. GrimesĀ® Cannellini Beans (White Kidney Beans) (drained, rinsed)
  • 1 teaspoon dried Italian seasoning
  • 1 cup finely shredded Italian cheese blend
  • 1/4 cup grated Parmesan cheese

Ingredients

Directions

Heat 1 tablespoon of the butter in large nonstick skillet over medium heat. Add gnocchi; cook 5 minutes or until starting to brown, stirring occasionally. Remove gnocchi to bowl. Add remaining butter, shallot and garlic to skillet. Cook 1 to 2 minutes or until softened, stirring frequently. Add greens; cook and stir 2 to 3 minutes or until wilted. Add water; cover and cook 2 to 3 minutes or until tender. Stir in tomatoes, beans, seasoning and gnocchi. Cook 3 to 5 minutes or until bubbly and thoroughly heated, stirring frequently. Sprinkle with cheeses. Cover; cook just until cheese is melted.

Tip: You can use your favorite sturdy greens in this recipe. If kale or spinach leaves are large, remove ribs and chop before adding to skillet.
