Ingredients

  • 1 tablespoon vegetable oil
  • (20oz) boneless skinless chicken breasts, cubed
  • 1/2 cup hickory or mesquite barbecue sauce
  • 1 (15.5oz) can garbanzo beans (drained, rinsed)
  • 1 (15.5oz) can Mrs. Grimes® Dark Red Kidney Beans (drained, rinsed)
  • 1 (15oz) can Mrs. Grimes® Black Beans (drained, rinsed)
  • 2 (14.5oz) cans diced tomatoes with green chiles (do not drain)
  • 1 cup salsa

Directions

In deep 12-inch skillet or medium Dutch oven, heat oil over medium-high heat. Add chicken. Cook 5 to 7 minutes or until chicken is no longer pink in center. Stir in barbecue sauce until chicken is coated. Stir in all remaining ingredients. Bring to a boil; reduce heat. Cover; simmer 10 minutes.

Serving Suggestion: Serve with warm tortillas or cornbread. Garnish each serving with fresh cilantro, sour cream and avocado.

Tip: If you have leftover grilled chicken from the barbecue, chop that and use in the chili. Just stir in the barbecue sauce and proceed with the recipe.
