Ingredients

1/4 cup chopped fresh cilantro
2 tablespoons olive oil
1/4 cup fresh lime juice
1 teaspoon finely chopped chipotle chilies
1 tablespoon red wine vinegar
1 teaspoon ground cumin
2 (15oz) cans Mrs. Grimes® Black Beans (drained, rinsed)
1 (15oz) can whole kernel corn, drained
1-1/2 cups chopped green or yellow onion
2 medium chopped Roma tomatoes (about 1 cup)
1 cup chopped red and green bell pepper

Preparation:

In large bowl, beat lime juice, olive oil and vinegar with wire whisk until blended. Whisk in chipotle chilies, cumin and cilantro. Stir in all remaining ingredients; mix until well-coated. Season to taste with salt and pepper.
