8 ounces uncooked penne pasta
1 teaspoon olive oil
1 pound boneless skinless chicken breast, cubed
1/4 cup barbecue sauce
1 (15.5oz) can Mrs. Grimes® Dark Red Kidney Beans, drained, rinsed
1 (15oz) can w
hole kernel corn, drained
1 (14.5oz) can petite diced tomatoes (do not drain)
1 1/2 cups (6oz) shredded Pepper Jack cheese (divided)


Cook pasta as directed on package. Drain; keep warm

Meanwhile, heat oil in 12-inch nonstick skillet over medium-high heat. Add chicken. Cook 5 to 7 minutes or until no longer pink in center, stirring frequently. Stir in barbecue sauce, beans, corn and tomatoes. Cook until thoroughly heated, stirring frequently. Stir in cooked pasta and 1 cup of cheese. Cook until thoroughly heated. Top with remaining 1/2 cup cheese.
