Ingredients

  • 1 pound lean ground beef (at least 90%)

  • 1 (14.5oz) can diced tomatoes (drained)
  • 1 (4oz) can diced green chilies (drained)
  • 1 (8oz) can tomato sauce
  • 1 cup uncooked elbow macaroni
  • 1 cup water
  • 2 teaspoons chili powder
  • Salt and pepper to taste
  • 1/2 cup shredded reduced-fat Cheddar cheese

Directions

In 12-inch nonstick skillet, cook ground beef over medium-high heat 5 to 7 minutes or until no longer pink, stirring to break up ground beef. Stir in all remaining ingredients except cheese. Bring to a boil. Cover; reduce heat. Simmer 12 to 15 minutes or until macaroni is tender. Sprinkle with cheese. Cover; let stand 2 to 3 minutes or until cheese is melted.

Serving Suggestion: Serve this easy family-friendly skillet meal with fresh fruit or fresh raw vegetables to nibble.

Tip: This recipe is easily doubled for a crowd. Cook it in a deep 12-inch skillet or a Dutch oven.
